Pancakes

These blender pancakes are easy peasy and so freaking good! Greg literally loved them so much he requested them 3 mornings in a row (& he’s an extremely picky)! They actually store really easy as well. I make a whole batch and then put some in the fridge for the next day!

Makes 8 pancakes

  • 1 1/2 cup rolled oats

  • 2 tsp baking powder

  • 1/2 tsp cinnamon

  • 2 large bananas

  • 1 tsp maple syrup

  • 1 egg

  • 1 cup of unsweetened coconut milk or whatever milk you use (if using cows milk—I am not sure how consistency would be so may need to add more or less)

  • 1 tsp vanilla

  • pinch of sea salt

  • butter or coconut oil for pan cooking

  1. Add all ingredients (except butter/oil) to blender and blend until smooth

  2. Add coconut oil/butter to a pan over medium heat

  3. Use 1/3 cup of batter per pancake and cook until all the bubbles pop. Should be about 2-3 minutes

  4. Flip over and cook for another minute or 2.

  5. Repeat for all the pancakes

  6. Enjoy!

** You could definitely top these pancakes with additional fruit and or mix blueberries/chocolate chips/nuts into the recipe**
