1 tablespoons butter or Avocado Oil
1/2 - 1 sweet onion, diced small
4 cloves garlic, minced
1 lb of shrimp
2 tablespoons parsley (or I use whatever I have fresh)
1 dried oregano
Pinch red pepper flakes
2 tablespoons extra vergin olive oil
1 zucchini - zoodled
Black pepper and Salt to taste
Lemon Wedges
1. Heat the butter in a large skillet over medium heat. Add the onion and cook until soft and starting to brown.
2. Add the garlic and cook the garlic until it is fragrant and soft, but not brown. About 1-2 minutes more.
3. Add the shrimp, parsley, oregano, and the red pepper flakes. Stirring often. Cook the shrimp until they are pink. About 6 minutes total.
4. Raise the heat to medium - high and add the olive oil and zoodles. Cook until the zoodles are hot. Season with salt and pepper
5. Serve with squeeze of lemon or on the side.
6. Enjoy your shrimp scampi!
I have made this with pasta and done 1/2 pasta 1/2 zoodles which is good as well!
