I love peanut butter eggs and I wanted to find a healthy version with low amounts of sugar and included whole ingredients. I adapted the recipe from http://www.erinliveswhole.com. These little eggs are absolutely delicious. They are light on your stomach and the chocolate and peanut butter have a perfect balance of salty and sweet.
Okay so lets break it down with these simple ingredients:
1/2 cup peanut butter
1/4 cup coconut flour
2 tbsp maple syrup
1 tsp vanilla
1/2 cup of semi-sweet chocolate
1/2 cup of dark chocolate
1 tsp coconut oil
In a bowl, combine the peanut butter, coconut flour, maple syrup, and vanilla.
Divide into 8 or 9 balls and make into egg shapes.
3. Place in freezer for 30 minutes.
4. Melt the chocolate and the coconut oil and dip the peanut butter eggs into the chocolate. I drizzled the remaining chocolate on the eggs, which was a much harder task than I realized!
5. Place the chocolate covered peanut butter eggs back in the freezer or fridge for another 30 minutes.
6. Enjoy from fridge or freezer!
