Peanut Butter Balls

Sweet tooth ache? Here’s an easy and quick solution.

Makes 6-8 balls

1 cup peanut butter

3/4 cup coconut flakes (or coconut flour-I used flakes because I didn’t have flour and it turned out great!)

2 tbsp maple syrup (honey would also work but haven’t tried it)

2 tbsp almond flour (prob can do without this)

6 ounces chocolate (I used half semi sweet and half dark because that’s all I had)

2 tsp coconut oil

Directions:

  1. Combine peanut butter, coconut flakes, maple syrup, and almond flour. May need to use your hands to combine fully.

  2. Roll into 1 inch balls and place on a pan

  3. Refrigerate balls for 20 minutes

  4. With about three minutes left melt chocolate in either double boiler or microwave with coconut oil. *if in a microwave turn heat down and stir often, about every 30-60 seconds making sure not to overcook/burn. * To use a double boiler click here.

  5. Drop 1 ball at a time into melted chocolate. Roll it around until fully covered. Allow the excess Chocolate to drip off ball and place ball back on baking sheet. Repeat until all balls are covered in chocolate.

  6. Refrigerate chocolate balls for 1 hour. The chocolate will harden and you will be good to enjoy!

  7. Freeze extras and pull out 1-2 at a time to give yourself a nice treat.
