The Best Ooey-Gooey Sweet Potato Brownies

These brownies are absolutely gooey and delicious! The best part…NO ADDED SUGAR (except for the chocolate chips-you could use sugar free chocolate chips, but I didn’t have any so I just used what I had).

  1. 1 1/2 cups of baked sweet potato

  2. 1/2 cup of peanut butter

  3. 2 eggs

  4. 1/4 cup cacao powder

  5. 1/4 tsp of baking soda

  6. 1/4-1/2 cup chocolate chips

  7. Time to bake the sweet potato! Preheat the oven to 350 degrees. Poke holes in the sweet potatoes and bake. Bake in the oven for 45-60 minutes until the potato is completely cooked through and soft.

  8. Once cooked, peel the skins off the potatoes. It should be pretty easy to do.

  9. Mash the sweet potatoes well with a fork and allow to cool.

  10. Preheat the oven to 350 degrees to cook the brownies.

  11. Preparing the Brownie Batter in a larger bowl, combine the 1/2 cup of peanut butter, 2 eggs, and the 1 1/2 cup of sweet potato. Mix until smooth.

  12. Add the 1/4 cup of cacao powder and 1/4 tsp baking soda and mix until combined.

  13. Fold in the chocolate chips.

  14. Add the brownie batter to a 8×8 baking dish. Spray with cooking spray oil if you’re not using parchment paper. I lined mine with parchment paper for easy clean up.

  15. Bake for 24-26 minutes.

  16. Once the brownies are cool, cut them.

  17. Enjoy!
